It began in 2006 when because of a
catastrophic illness I could not work and, consequently, also not afford to
go and buy my favorite, high quality 'food group' anymore. And the
idea that I would have to make do with what was available on the shelves of
our local markets did not sit well.
Around that time serendipity struck
when I found an old, probably the only surviving, book of notes I had made
as a professional chef some light years ago in Asia which detailed recipes
and procedures for Chocolates.
It was a 'Eureka' moment and I
almost immediately set about to get Chocolate that was equal or similar to
the Belgian base recipe I had, found the stuff after awhile and began
experimenting with it.
The very first Chocolates that were
a joy to eat had a shelf life of about a minute, they didn't even make it to
my wife for her to try but eventually she, too, was allowed to taste them. She told
friends about those Chocolates, they, too, tried them, then they told
their friends and so on...you know how that goes.
The very first outside order I
received
was for bite sized chocolate bonbons that said Vote and had a
donkey
on it. I made something like 30 odd 1/2lb boxes (25 or so pieces) in dark
chocolate mint, milk chocolate mint and peanut butter of them.
